Peppermint Hot Chocolate Parfait
POPcorn Crumb
• 3⁄4 cup Flour
• 1 TSBP Granulated Sugar
• 1⁄4 tsp Salt
• 3⁄4 cup of crushed Peppermint Hot Chocolate Popcorn
• 4 TBSP Melted Butter
• 2-3 tsp Cold Water
• 1 tsp of Peppermint Flavor (optional)
Whipped Cream – Fresh Made or Store Bought
• 2 cups Heavy Cream
• 1⁄2 cup Powdered Sugar
• 1 tsp Vanilla
Pound Cake – Homemade or Store Bought
Instant Chocolate Pudding
Heat oven to 350 degrees
- Using a food processor or blender chop up the popcorn.
- In a bowl or stand mixer add flour, sugar, salt and popcorn. Mix together.
- Add melted butter, peppermint flavor and 2 tsp of water. Mix dough until everything is incorporated and form a soft crumbly dough.
- Line a baking sheet with parchment paper. Spread the crumb mixture onto the baking sheet. Break dough apart so it forms small crumbs (about 1⁄2” in size).
- Bake until golden, about 8-10 minutes. Set aside and completely cool.
- In a bowl add the 2 cups of heavy cream, powdered sugar and vanilla.
- Using a stand or hand mixer whip up the cream until stiff peaks form.
Assembling the Parfait:
- Choose any glass. I think a stemless wine glass works best.
- Start with a dollop of whipped cream. Next add a layer of the pound cake.
- Follow with Chocolate Pudding then top with the Popcorn Crumbs.
- Repeat until glass is full.
- Top the parfait with whipped cream, Popcorn Crumbs and some crushed peppermint or a a candy cane for a pop of color.
Serve right away or refrigerate until ready to eat. Best if eaten on the same day.
All of the ingredients, aside from the Popcorn Crumb, can be store bought or homemade and also interchangeable to fit your flavor palate.
