Spiced White Chocolate Cookie Pop Iced Gingerbread Cookies

 

Spiced White Chocolate Popcorn Cookies

(working title)
Cookies - Makes 12 large Cookies or 2 1⁄2 dozen Mini Cookies
• 1 cup unsalted butter – softened
• 1 cup packed light brown sugar
• 1⁄2 cup granulated sugar
• 2 large eggs
• 1 tsp baking soda
• 1 tsp baking power
• 1 tsp salt
• 1 TBSP Ginger
• 1 tsp cinnamon
• 2.5 cups all-purpose flour
• 1 cup white chocolate chips
• 1 1⁄2 cups Holiday Pop White Chocolate Gingerbread Popcorn (save rest of bag for later)

 

Heat oven to 350 degrees.

 

  1. In a bowl or stand mixer, cream together butter and sugar for about 2 minutes.
  2. Scrape down the sides of the bowl.
  3. Add eggs and mix until incorporated.
  4. Add flour, spices, baking
  5. soda, baking powder and salt until well mixed.
  6. Add chocolate chips, popcorn and mix.
  7. Line a cookie sheet with parchment paper.
  8. Using a scooper or spoon make a nice ball of dough.
  9. Roll ball in remaining popcorn to coat the dough.
  10. Place dough on baking sheet. Make sure they are at least 2-3” apart.
  11. Bake for 10-12 minutes or until golden.
