Spiced White Chocolate Cookie Pop Iced Gingerbread Cookies
Spiced White Chocolate Popcorn Cookies
(working title)
Cookies - Makes 12 large Cookies or 2 1⁄2 dozen Mini Cookies
• 1 cup unsalted butter – softened
• 1 cup packed light brown sugar
• 1⁄2 cup granulated sugar
• 2 large eggs
• 1 tsp baking soda
• 1 tsp baking power
• 1 tsp salt
• 1 TBSP Ginger
• 1 tsp cinnamon
• 2.5 cups all-purpose flour
• 1 cup white chocolate chips
• 1 1⁄2 cups Holiday Pop White Chocolate Gingerbread Popcorn (save rest of bag for later)
Heat oven to 350 degrees.
- In a bowl or stand mixer, cream together butter and sugar for about 2 minutes.
- Scrape down the sides of the bowl.
- Add eggs and mix until incorporated.
- Add flour, spices, baking
- soda, baking powder and salt until well mixed.
- Add chocolate chips, popcorn and mix.
- Line a cookie sheet with parchment paper.
- Using a scooper or spoon make a nice ball of dough.
- Roll ball in remaining popcorn to coat the dough.
- Place dough on baking sheet. Make sure they are at least 2-3” apart.
- Bake for 10-12 minutes or until golden.
